For more than 80 years, the Wisconsin State Fair and the Wisconsin Bakers Association have teamed up to operate the Dairy Bakery (commonly referred to as the Cream Puff operation). The Wisconsin Bakers Association proudly manages the operation while the Wisconsin State Fair markets and supports the operation. More than 200 employees work as a team 24 hours a day, seven days a week, during the two-week span the fair is held to create, bake, and sell the cream puffs to hungry fairgoers! With an average of 50,000 cream puffs sold per day and more than $1 million in sales in 2004, 2005, and 2006, the Dairy Bakery has become a signature item at the fair.

I've been to the Wis. State fair but I've never had one of these. I'll have to try one next year

I left Wisconsin in 1978 for a warmer climate. Funnel cakes are better known in this part of the country, HOWEVER they cannot beat "Wisconsin State Fair Cream Puffs"But I make the cream puffs at home and the people here in the south love them.
I also make them for fundraisers. They are always a hit!
