Also known as “rainbow cookies”, especially to children. Intensely almondy, cake-like cookie layers with raspberry and apricot preserves between them, encased in semi-sweet chocolate. These are Italian in origin, but mostly indigenous New York. Obviously, to have the full experience you’ve got to go to a bakery that makes their own, preferably in Brooklyn.
Also, the correct colors are pink, yellow, and green, in that order. Accept no substitutes.

The best cookie. I mean this quite literally. They were an essential part of my childhood, but beyond that, they’re just the definition of goodness.

I take it they don’t have these where you are? I’m not sure of their exact range, I just know that generally New Yorkers are the only group of people who take their availability for granted.
I’ve not seen them anywhere!

Still, I think it’s important to spread the word. Now at least you’ll know this cookie color configuration is associated with intense deliciousness, and if you see one, you’ll not miss out. :)
When we first moved to Brooklyn, I was so excited to see these in the corner bakery, but upon trying them, I was actually disappointed that the “chocolate” on them was so waxy and tasteless. In my opinion, the Italian cookies all look better than they taste. (But, obviously, I’m in a minority here.) :) Yeah… Bayridge, Brooklyn, where the subway train shakes your windows. Good times.
There are naturally good and bad Tri-color cookies, even in Brooklyn… one must know where to look. ;)
