No, not the Americanized ground-beef culinary abortions that are peddled by Taco Bell, et al.
I mean real tacos, from a real taqueria. They’re compact, quick to eat while on the go, can be bought damn near anywhere in Los Angeles (taco trucks for the win). And they’re great.
Just make sure that there’s not too much stuff covering it…no cheese, lettuce, tomato, nothing like that. A good taqueria-style taco should be meat, soft corn tortillas, sauteed onion, and cilantro with either green or red sauce…that’s it! If a taqueria sells tacos laden with coverings, chances are the meat sucks.
You can have them so many different ways: carne asada, pollo, carnitas, al pastor, pescado, camarones, buche, lengua, cabeza…and if two aren’t enough, you can always “dos mas” it. Top it off with a cold bottle of lime Jarritos soda or a cold beer and you’re set.
