Peking duck is a chinese dish where you take the skin of a duck that has been roasted in mystery chinese spices, till perfectly crispy. Then fold it inside a steamed pancake with a sprig of spring onion, a strip of cucumber and a dollop of hoisin sauce. It is simply delicious!
