As much as I love brie, it’s hard to get good brie these days. At least not at a premium. I think fresh mozzarella isn’t too much of a splurge, especially when its so versatile. You can enjoy its flavor (it does have a flavor) in a simple antipasto or fried! Grocery store mozzarella has it’s place too—it makes mac ‘n’ cheese a lot creamier.
