Not sure if it’s a biscuit or a cake, but they comprise two shortbread-type biscuits sandwiched together with jam, topped with icing and a bit of cherry. They vary enormously in quality, but the best ones I have ever come across are sold in the staffroom of my school in North Ayrshire!
