Eating Every Part of the Chicken and Leaving the Bones in on Purpose

You’ve gotta hand it to these guys. They’re tenacious and resourceful, and have this strange “eat everything” vibe about food, especially chickens. It seems to me that the more difficult to eat something might be, the more relish they eat it with (no, not that relish).
We soft Westerners only eat the soft gooey white parts of the bird, or maybe the darker meat at a push if we’re trying to look earthy. But if you go into even the finest restaurants in Hong Kong, every table is adorned with small spitoon-ettes into which even the chi-chi-est members of the Hong Kong Jet Set insist on spitting their chicken bonelets mid-chew.
And they go absolutely crazy for chicken feet for some reason.
Ah well; long may my mind be boggled by the wondrousness and diversity of the world and it’s many stomachs.
